This is one great side dish for chicken or pork. It is also makes a nice addition for mexican dishes or beans. Polenta is a great corn product and has many uses.

Place all ingredients except olive oil in a medium sauce pan. Bring to a boil and stir constantly until very thick. (about 7-10 minutes) Remove from heat. In a skillet, add the olive oil, and heat to 350 degrees. Drop polenta mixture into skillet with a Tablespoon to make 8-10 small corn cakes. When brown, turn to brown other side. Serve Hot.
