Spirited Blackened Fried Chicken

Fried chicken with a southern & southwest flair to give you the best of both worlds.

  • 2 TBS Scott Farms Blackened Seasoning
  • 1 TBS Scott Farms Spirited Southwest Rub
  • 2 cups of all purpose flour
  • 2 cups of buttermilk
  • 2 cups of Vegetable oil (we prefer safflower or peanut oil)
  • 1 whole chicken (cut into pieces)

Mix Scott Farms Spirited Soutwest Rub into the buttermilk. Heat oil in cast iron skillet or large sauce pan to between 350-360 F.  Put flour & Scott Farms Blackened Seasoning in a paper bag or large plastic container-shake to mix. Place chicken parts in buttermilk mixture. Take out of liquid & place about 1/2 of the chicken pieces in the bag or container and shake to coat pieces. Now transfer to hot skillet (Be careful not to drop in to fast as hot oil might splater causing burns.)  Hint: You can hold chicken for a time by placing cooked chicken in 200 degree oven until ready to serve. You now have fried chicken that has kick and a wonderful flavor.
