Scott Farms Zucchini with Crabmeat Stuffing

This combination of Zucchini Squash ,Crabmeat, Scott Farms Seasoning & Asiago Cheese will make one give up that crabcake craving for this new use for crabmeat. I personally love this one!!  Larry Scott


2 medium zucchini squash halved lengthwise and hollowed out. Reserve hollowed out zucchini for stuffing.

6 oz lump crabmeat

2 TBS mayonaise

1 1/2 tsp Scott Farms Grateful Garlic All Purpose Seasoning

1/4 cup , dried bread crumbs

(Note your can use Scott Farms Croutons found in the Bread & Related Recipe section. We especially like the Spirited Southwest croutons. Remember to crush into fine pieces)

2 Tbs of grated Asiago cheese 

Reserved zucchini, grated

Salt & Pepper to taste


Combine following ingredients in a medium size bowl: crabmeat,mayo,Scott Farms Grateful Garlic All Purpose Seasoning, Asiago cheese, & Reserved zucchini. Mix well & set aside.

Either use your own bread crumbs or crush some Scott Farms Croutons (recipe found in Bread & Related Recipes section) We prefer the Spirited Southwest Croutons.

Place set aside mixture in hollowed out zucchini halves. Top with bread crumbs & if you prefer grate some extra Asiago cheese on top. Salt & Pepper to taste.

Place in baking pan or dish cover with foil & bake for 30 minutes at 350 degrees in oven. We like to finish up by placing under broiler (after removing tin foil) for a few minutes to create a crisp topping. Serve Hot. There will be no leftovers on this dish.
