Scott Farms Italian Sausage, Onion , Peppers

We use a smoked turkey sausage in this recipe but if you are willing to add more fat a good italian sausage is okay.This is one that is great on whole wheat hogie buns.


  • 1/4 cup olive oil
  • 14 oz. or close to this amount of smoked italian turkey sausage (other premiu;m italian sausage is okay if you are not watching the fat)
  • 1 bell pepper sliced (red is sweeter & more colorful)
  • 2 sweet onions sliced
  • 1 tsp salt ( We prefer sea salt)
  • 1 cup of dry italian wine such as Marsala
  • 2 tsp of Scott Farms Herbs Etc. Rub
  • 1 Tbs of Scott Farms Grateful Garlic Seasoning
  • 1 tsp of Scott Farms Spirited Southwest Rub
  • 1/2 tsp dried oregano
  • 2 Tbs of tomato paste
  • 1 medium size can of diced italian tomatoes
  • 6 whole wheat hogie rolls


Put oil in skillet and bring heat up to medium. Add the sausages and cook on each side until brown. Remove & drain on paper towels. Keeping pan over medium heat, add onions, peppers, Scott Farms Herbs Etc. Scott Farms Grateful Garlic jSeasoning, Scott Farms Spirited Southwest Rub, cook until onions are brown. Add oregano & tomato paste & stir until mixed.

Add the wine, diced tomatoes & stir until well mixed. Cut sausages into cubes. Add meat back to pan and stir cooking until sauce has thickened. ( approx 18 minutes)

Now open up your hogie rolls & layer mixture into buns.Serve hot. This dish can be served as a side dish with your favorite pasta.  It is healthy but so tasty.
