Scott Farms Open-Faced Portobella Sandwich

This sandwich is great for vegetarians and people who love tasty meals but are watching their diets.


  • 4 portobella mushrooms cut lengthwise
  • 2 pocket pita's cut in half
  • 2 tsp Scott Farms Chuckwagon Rub
  • 1/4 cup of baby spinach
  • 1 roasted red pepper cup(cut in thin strips)
  • 1 cup of crumbled feta cheese


Preheat oven to 350 degrees. Take Scott Farms Chuckwagon Rub  & coat mushrooms (hint first rub with olive oil). Grill until tender about 7 minutes, don't turn. Place pita halves, cut side up, on a baking sheet; Lightly baste with olive oil. Top with spinach, roasted pepper, cheese (reserve some for topping), and grilled mushrooms. Top with reserved cheese. Bake on center rack for 4-5 minutes to melt cheese.
