Combine ingredients in a bowl and mix making sure to break up brown sugar lumps. Transfer to a airtight container. It will keep for several weeks. To cure fish place some seasoning in bottom of glass baking dish,then fish fillets and put rest on top, Cover with some plastic wrap and let set in refrigerator for at least 6 hours. When ready to smoke wipe & wash cure off fish, blot dry. Then smoke over indirect heat. This cure helps to intesify the smoke flavor. Enjoy!! Smoked Salmon is my favorite.
